A blend of multiple vineyards across Henty Wine region with most fruit coming from Doven and Cobboboonee vineyards. Pressed and fermented without cultured yeast and on full solids (not settled prior to ferment). 35% fermented and aged in old oak puncheons, 65% Stainless Steel tank. Full MLF and 9 months lees contact prior to a single racking and bottling in January. No fining or filtration.
